ingredients
2 cups fresh peaches (skins and pits removed).
2 ounces simple syrup (recipe below)
4 ounces bourbon
8 Zipzicle® ice pop bags (available from zipzicles.com)
Simple Syrup
1 cup granulated sugar
1 cup water
2 tbsp lemon juice
1/2 tsp vanilla

First make simple syrup: Place all simple syrup ingredients in a saucepan and bring to a low boil. Once sugar is dissolved remove from heat and let cool.
To make ice pops: Combine peaches, bourbon and simple syrup in blender and mix well. Pour into pouches to the fill line. Use a funnel for easy filling. Zip closed and place in freezer for fifty minutes or until frozen. May not freeze solid due to alcohol content. Cheers!
