An unbelievably refreshing blend of honeydew and cucumber juice with a hint of mint! Perfect for cooling off on a hot summer day!
ingredients
1 fresh honeydew melon
1 whole cucumber
4 tablespoons fresh lime juice
3 tablespoons mint simple syrup (recipe below)
Simple Syrup: 9 sprigs fresh mint, leaves removed; 1/2 cup sugar; 1/2 cup water
12 Zipzicle® ice pop bags (available from zipzicles.com)

Mint Simple Syrup: Stir 1/2 cup sugar and 1/2 cup water water into a pot over medium heat until sugar dissolves. Allow the mixture to cool to room temperature and add mint leaves to mixture and muddle. Allow the leaves to steep for at least 20 minutes. Strain, and discard leaves. You can store any remaining syrup in an air tight container and can keep up to a week.
Peel and core honeydew. Peel cucumber (optional). Place honeydew and cucumber in a blender and processes until pureed. Add the lime juice and simple syrup and blend until combined.
Using a batter pen or funnel, fill pouches to recommended line. Place upright in a mug or container and freeze. Enjoy!
