Combine sugar and water into a pot over medium heat until sugar dissolves. Allow the mixture to cool to room temperature and add mint leaves to mixture and muddle. Allow the leaves to steep for at least 20 minutes. Strain, and discard leaves. You can store any remaining syrup in an air tight container and can keep up to a week.
Peel and core honeydew. Peel cucumber (optional). Place honeydew and cucumber in a blender and processes until pureed. Add the rest of the ingredients and blend until combined. Fill, freeze and enjoy!
