How to preserve fresh herbs in olive oil for cooking later on.
Ingredients
  • fresh herbs of your choosing cut as needed for cooking

Instructions
  1. Place fresh cut herbs into pouch. Using a funnel, slowly pour Olive Oil over herbs. Be sure not to go over fill line. Zip pouch closed. We use a high grade olive oil from Kitehawk Farms in Atascadero, California. More information available at www.kitehawkfarm.com.
  2. Line a cookie sheet with paper towel or wax paper. Place pouch on cookie sheet, folding the top to keep oil clear of seal. Gently poke the pouch to distribute herbs evenly. Freeze until solid.
  3. When ready to cook, open the pouch and push out desired amount. Cut or break off. Push remaining back into pouch and reseal. Refreeze.
